Quick and Easy Brown Rice Khichdi

By now we have all heard many things about brown rice. How it is safer, more nutritious and healthier than white rice. But what is Brown rice?

Brown rice is whole grain rice with the inedible outer hull removed. This kind of rice sheds its outer hull or husk, but the bran and germ layer remain on, constituting the brown or tan colour of rice. White rice is the same grain without the hull, the bran layer, and the cereal germ.

There is also red rice, gold rice, and black rice (also called purple rice) are all whole rice with differently pigmented outer layers.

But what can you make from brown rice? Here is a brown rice khichdi recipe you are going to love!

Brown Rice Khichdi

Ingredients

  • ½ cup brown rice
  • ½ cup mixed dal chilka moong, tuvar and masur in equal quantities.
  • 2 tomatoes medium
  • ¼ cup capsicum chopped
  • ¼ cup peas
  • 1 carrot chopped
  • 3 cups water
  • Tempering
  • 1 tbsp. oil/ghee
  • ½ tbsp. cumin seeds/ jeera
  • 1 tsp. ginger chopped
  • 1 green chilly chopped ( increase to 2 as per your taste)
  • Salt as per taste

Method

  1. Heat oil or ghee in a pressure cooker. Add cumin seeds and let it splutter. Now, add the chopped green chilly and ginger.
  2. Add chopped tomatoes along with some salt. Mix well and cook until they soften.
  3.  Add turmeric, red chilly powder.
  4. Now add the chopped carrots, capsicums and peas. Mix well.
  5. Add the soaked dal-rice to the vegetables.
  6. Add 3 cups of water to the dal rice mixture. Pressure cook for 2-3 whistles.
  7. Serve hot with papad and pickle. You may also serve it with yoghurt or boondi raita if not vegan.
